Common use: citric acid is used extensively in the food, beverage, cosmetic, and pharmaceutical industries.
In food applications, it can be used as an effective preservative (keeps fresh fruit from oxidizing, regulates the pH level in canned goods), for flavor (coating candy produces the classic mouth puckering sourness), as salt replacement (substitute equal amount of citric acid for salt for the same flavor and none of the sodium), or as an emulsifier (eliminates fat globules in homemade ice cream).
Studies have shown that citric acid may help with calcium absorption and digestion of minerals as well as inhibit the growth of kidney stones.
Non-food applications include use as a great cleaning agent (added to dishwashing detergents it acts as a descaler), in shampoos (lowers the pH levels so hair will turn out smoother and shinier), in skin care (may improve skin health by stimulating collagen production and acting as an antioxidant) and in photography (used to quickly stop the development of photos)
One really fun use of citric acid is in bath bomb recipes as the agent responsible for the fizzing action: mix with a whisk ½ cup citric acid, 1 cup baking soda, ¼ cup oat flour (optional), and ¼ cup sea salt. Next blend in 2-4Tbsp melted coconut oil and any natural fragrances you like. Pack into forms and let dry 1-2 days. Take a bath and let it fizzz...!
Safety: although a weak acid, exposure to concentrated solutions of pure citric acid can cause irritation or erosive effects
Storage: store in a cool, dark, dry place in a well-sealed container.
